Made with only the freshest ingredients he can find, our food highlights the care, craft, and attention the Chef puts into the food. Our menu is a creative bridge between the agricultural traditions of New Mexico and the vibrancy of Mexican cuisine.

FRESH INGREDIENTS

Local matters! Paloma has relationships with various farmers in the Northern New Mexico Valley where we source fresh, local ingredients continuously. We use 100% organic, heirloom blue corn from Masienda for our masa based snacks such as tlayudas, sopecitos, and our fresh masa quesadillas. We are committed to preserving the ancient agricultural traditions of New Mexico.

An Ode to Agave

Traditionally-made agave spirits are an ode to Mexico and the spiritual connection between the master mezcalero (or sotolero) and the land. Family, history, tradition, nature, and time are reflected in the poetic execution of a traditionally-made mezcal, sotol, or bacanora.
